Marinated Fall Salads

There’s nothing better than a recipe that can be made ahead and enjoyed over the course of several days, especially once that tastes better the longer it sits! Using vegetables and an array of tasty additions, we’ll make several FALL focused salads that you can enjoy for lunches or dinner side dishes complete with loads of fiber, antioxidants, and gut supportive probiotics. Recipes include:

  • Roasted Cabbage and Kale Salad with Maple Mustard Dressing

  • Roasted Vegetable and Bean Salad with a Smoky Carrot (or Pumpkin) Sauce

  • Crunchy Ancient Grain Salad with Pomegranate Vinaigrette
