In this class, we will guide you through the preparation of three delicious meals that will maximize your nutrient intake even if you have a limited amount of time to cook and clean! This class will be taught by Crossroads nutritionist, Alexa Bedingfield, MD, CNS, LDN. Recipes are gluten free and include:
Mushroom Stroganoff with Chickpea Pasta
Thai Salad (“Larb”) made with turkey, pickled onions, avocado, radish, and homemade Thai vinaigrette
Coconut Fish Curry over steamed rice
